As we soon flip into the second week of February, the most awaited day of the year is nearly here… Pancake Day! This year, we’ve got a Rebel twist for you – introducing our Superfood Spinach Pancakes! 🥞
Ingredients: Serves 2
125g self-raising flour
1 tsp baking powder
2 eggs
1 tbsp melted butter, plus extra for frying
100ml almond or oat milk
50g baby spinach leaves, washed and chopped
Banana, walnuts and maple syrup to serve
Method:
STEP 1: Stir up a storm
Add the flour, baking powder, sugar, eggs, butter, milk, and a rebellious handful of spinach into the blender until you have a smooth, bright green batter.
STEP 2: Sizzle
Heat a bit more butter in a non-stick frying pan over medium heat. Dollop in small green discs, 2-3 at a time. Cook for 2 mins, until edges are set, and bubbles arise from the surface. Flip and cook the other side.
STEP 3: Rebel Feast
Serve with banana, a drizzle of maple syrup and walnuts.
